Oatmeal Cookie Waffles Made in a Blender: Quick Recipe

These easy oatmeal waffles are a delicious, nutritious way to start your day. Made entirely in the blender from oats and simple pantry ingredients, they’re quick to prepare and great for busy mornings.

My husband grew up eating waffles often, while I hadn’t tried them much. After experimenting with different flours, fats, and sweeteners, I landed on this healthier version that still tastes indulgent. My husband says they remind him of the classic white-flour, sugary waffles from his childhood — a compliment I happily accept.

Besides being wholesome and flavorful, these waffles are incredibly easy to make. Everything goes into the blender and is pureed until smooth. The only mildly annoying step is cleaning the blender, but the result is worth it.

Ingredients and substitutions

  • Milk of your choice – Cow’s milk works well; for a lighter option or to stretch your milk, use half milk and half water.
  • Nut or seed butter – Almond butter gives a mild, neutral flavor. Use peanut or sunflower seed butter as alternatives.
  • Egg – Binds the batter; for an egg-free version, try a flaxseed “egg” (1 tbsp ground flax + 3 tbsp water).
  • Oil – Vegetable oil or melted butter both work.
  • Vanilla extract – Adds warmth and depth.
  • Coconut sugar – Optional; reduce or omit for lower sugar needs or substitute maple syrup/honey (adjust liquid slightly).
  • Sea salt – Enhances flavor.
  • Cinnamon – Optional, for extra warmth.
  • Oats – Quick oats blend most easily, but rolled oats are fine too.
  • Baking powder – Gives lift and lightness.

Recipe tips

If waffles soften after sitting, they crisp right up in the toaster—convenient for leftovers. You can also customize the batter with mix-ins like chocolate chips, mashed banana, or blueberries. For a thinner batter, add a splash more liquid; for thicker, let it rest a couple of minutes to absorb moisture from the oats.

Ingredients

  • 1 cup milk of your choice use half water to save $$$
  • 1 Tablespoon almond butter
  • 1 large egg
  • 1 ½ Tablespoons oil or melted butter
  • 1 teaspoon vanilla
  • 1 Tablespoon coconut sugar
  • ¼ teaspoon sea salt
  • ¼ teaspoon cinnamon optional
  • 1 ½ cups oats
  • 1 teaspoon baking powder

Instructions

  • Add the ingredients to a blender in the order listed.
  • Blend until the mixture is smooth.
  • Let the batter rest 2–3 minutes to thicken slightly.
  • Pour about 1/2 cup of batter onto a preheated waffle maker for each waffle and cook according to your machine’s directions.
  • Repeat with the remaining batter to make about 4–6 waffles.
