Peach Bellini Popsicles Recipe — Refreshing Summer Cocktail Treat

Hey all! It’s officially summer, and I’m on a mission to transform my favourite cocktails into frozen treats—virgin versions included.

Not long after hosting a week-long Summer No-Bake Party, I wanted to celebrate the first day of summer with a cool, peachy frozen mocktail: Peach Bellini Popsicles. They’re simple, refreshing, and perfect for hot afternoons. I don’t drink much, so I tend to enjoy lighter, fruit-forward drinks. These are my easy, frozen, virgin take on a Bellini: two cans of Peach Bellini mocktail, a splash of non-alcoholic mango mix for depth (optional), thin slices of fresh peach or nectarine, a popsicle mold, and a freezer. No fancy decorations—just uncomplicated, delicious popsicles that pair perfectly with summer.

Summer brings memories of sticky, colorful popsicles from childhood—tongues stained bright, melting drops down the wrist, the brief shock of brain freeze, and the simple happiness of an icy treat. Those carefree moments are part of what makes popsicles so delightful.

Ingredients

  • 500 ml Peach Bellini Mocktail
  • 30 ml Non-alcoholic Mango Margherita Mix optional
  • 1 small peach or nectarine
  • 1 popsicle mold

Method

  1. Open the mocktails and refrigerate them for about 15 minutes so they settle slightly. This helps prevent overflowing when you fill the molds.
  2. If using, add the mango mix to the Peach Bellini mocktail and stir gently, then pour the mixture into your popsicle molds.
  3. Insert thin slices of peach or nectarine into each mold for texture and visual appeal, then place the sticks in position.
  4. Freeze for at least three hours, then unmold and enjoy your Peach Bellini Popsicles.
