Preheat the oven to 400°F and bring a large pot of salted water to a boil for the tortellini.

Place the cherry tomatoes and minced garlic on a large baking sheet. Drizzle with olive oil and season with salt and black pepper. Move the tomatoes slightly to create a space in the center for the cheese.
