Garlic Herb Tortellini
Preheat the oven to 400°F and bring a large pot of salted water to a boil for the tortellini.
Place the cherry tomatoes and minced garlic on a large baking sheet. Drizzle with olive oil and season with salt and black pepper. Move the tomatoes slightly to create a space in the center for the cheese.
Place the Boursin cheese (remove from containers) in the center of the tomatoes. Bake for 20–25 minutes, until the cheese is melted and the tomatoes are blistered.

- 20 oz. tortellini (family-sized)
- 3 – 4 cups fresh baby spinach
- 1 cup fresh basil, chopped
Instructions

- Meanwhile, cook tortellini in salted boiling water according to package directions. Drain and return to the pot.
