How To Make Cauliflower Steaks

  • Position an oven rack in the lower third of the oven and preheat to 450°F. Line a baking sheet with parchment paper.
  • Remove the outer leaves from each cauliflower head and trim the stem slightly. Cut each head in half lengthwise through the center. From each half, slice a 1½-inch-thick “steak.” For large heads you may get an extra steak from the sides. Trim any loose florets—aim for about 4 to 8 pieces total.
  • Arrange the steaks on the prepared baking sheet. In a small bowl combine salt, pepper, garlic powder, oregano, thyme, and paprika. Brush both sides of each steak with olive oil, then evenly sprinkle the seasoning mix over both sides.
  • Tightly cover the baking sheet with foil and bake for 5 minutes to steam and soften the cauliflower. Remove the foil and continue roasting for 10 minutes to develop color and caramelization.
