Paleo smoothie

Here’s my favorite Paleo breakfast smoothie. One of the best perks of smoothies is how fast and effortless they are to prepare—just toss the ingredients into a blender and blend until smooth.

This particular recipe was inspired by a green smoothie we once enjoyed from a food truck. My kids loved it—greens and everything—and kept asking me to recreate it. After a few trials, I arrived at this version. It’s fun, easy to make, and kid-approved.

It’s especially satisfying because it genuinely delivers a generous amount of greens: three cups of spinach (or other tender leafy greens) packed into the blender. That’s not just a token handful; it’s a real serving that contributes both flavor and nutrition.

I like the pre-washed baby greens blends sold in bags—baby spinach, baby kale, baby chard—because they blend smoothly and save prep time. When measuring, pack the greens into the measuring cup. You can use carton coconut milk, but canned coconut milk usually gives the creamiest, most flavorful result.

A secret I often use in smoothies is avocado. It doesn’t make the drink taste like avocado, but it prevents excessive separation (though a little separation can occur if stored for many hours), provides a silky texture, and adds healthy fats. I also like to add a few drops of wild orange essential oil for a bright, citrusy note that enhances the tropical flavors.

Adaptations and substitutions

  • Kale can be used instead of spinach; both work well.
  • The riper the banana, the sweeter the smoothie will be.
  • For an extra-rich, creamy texture, chill the coconut milk and use only the thick cream from the top of the can.
  • You may substitute coconut milk with regular milk, avocado milk, Greek yogurt, or other milk alternatives.
  • Maple syrup is optional; I rarely use it, but you can sweeten with honey or another sweetener if needed.
  • Try other essential oils like lime or lemon to vary the flavor.
  • A small pinch of a high-quality finishing salt can enhance sweetness and flavor—avoid using standard table salt.
