Saturday: Family Night Out

Sunday: Baked Chicken, Broccoli, Macaroni & Cheese + Apple Crisp (Make Ahead)

Monday: Slow Cooker Vegetable Soup + Cornbread (Slow Cooker + 30 Minutes)

Tuesday: Steak Fajitas + Guacamole + Restaurant Style Salsa (30 Minutes)

Wednesday: Buffalo Shrimp Salad (15 Minutes)

Thursday: Sheet Pan Brown Sugar Salmon and Vegetables (from the Add a Pinch Cookbook) (30 Minutes)

Friday: Bacon Wrapped Pork Tenderloin + Green Beans + Roasted Carrots

 

Meal Plan Tips:

Sunday:
Mac & Cheese: Make the macaroni and cheese up to three days ahead and store it in the refrigerator. If you won’t need the whole batch at once, divide it into two 8 x 8 baking dishes—one to bake within three days and the other to freeze for up to a month. Do not add the buttery cracker topping until you bake it.

Monday:
Slow Cooker Vegetable Soup: Assemble all ingredients in the slow cooker insert, cover, and store in the refrigerator overnight. In the morning, set the insert on the counter to take the chill off while you have breakfast, then start the cooker before you leave.

Tuesday:
Steak Fajitas: Chop and prep all vegetables ahead of time and store them in airtight containers in the refrigerator to shave minutes off dinner. You can make the salsa earlier in the week; it keeps well refrigerated. For best flavor and texture, make guacamole just before serving.

Wednesday:
Buffalo Shrimp Salad: The salad comes together quickly, but make the buffalo sauce ahead of time to streamline prep. A homemade sauce is great, though a bottled version works in a pinch.

Thursday:
Sheet Pan Brown Sugar Salmon and Vegetables: This is a quick sheet-pan meal from the cookbook. It’s designed to be simple to prep and ready in about 30 minutes.

Friday:
Bacon Wrapped Pork Tenderloin: For an easy evening, wrap the tenderloin in bacon ahead of time, wrap tightly, and refrigerate. When you’re ready to cook, remove the wrapping and roast as directed.
