Using a boxed cake mix is a handy shortcut for homemade baked goods when you want great flavor with minimal effort. Around the holidays I often reach for a box of cake mix when I need a fast dessert that still feels special.

Ingredients Needed

  • Yellow cake mix (or white cake mix)
  • Olive oil (or vegetable oil)
  • Eggs
  • Cinnamon and sugar for rolling

How to make cake mix snickerdoodles

Step 1: Empty the box of yellow cake mix into a mixing bowl. Add the eggs and oil, then beat with a hand mixer until a cohesive dough forms.

Step 2: Cover the bowl and chill the dough in the refrigerator for 1 hour. Chilling firms the dough so it’s easy to roll and helps the cookies stay puffy instead of spreading flat.

Recipe Tip

Chilling the dough makes rolling simpler and keeps the cookies thick and soft as they bake.

Step 3: In a small bowl, mix the sugar and cinnamon. After chilling, form the dough into balls, then roll each ball in the cinnamon-sugar until coated.

Step 4: Arrange the coated dough balls on a nonstick baking sheet and bake at 350°F for 10–11 minutes. Remove when the tops crack and the edges look set. Transfer to a wire rack to cool.

Ingredients

  • 1 box yellow cake mix
  • ½ cup olive oil, or vegetable oil
  • 2 eggs
  • 1 tablespoon cinnamon
  • cup sugar

Instructions

  • Beat together the yellow cake mix, oil, and eggs until combined in a mixing bowl.
  • Cover and chill the cookie dough in the refrigerator for 1 hour to firm it up and prevent spreading.
  • In a small bowl, mix the sugar and cinnamon.
  • Roll the dough into balls and drop them one at a time into the cinnamon-sugar, coating all sides. Place on a nonstick baking sheet.
  • Bake at 350°F for 10–11 minutes, until the tops crack and the edges look set. Do not overbake.
  • Remove from the baking sheet and transfer to a wire rack to cool completely.
