Red White and Blue Cake Mix Cookies Recipe

A boxed cake mix is loaded with white chocolate chips and freeze-dried blueberries and raspberries to make festive red, white and blue cookies.

Ingredients

  • 1 box vanilla cake mix, {15.25 oz}
  • cup butter, {melted}
  • 2 eggs
  • cup white chocolate chips
  • cup freeze-dried raspberries
  • cup freeze-dried blueberries

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine the vanilla cake mix, melted butter and eggs. Mix with a handheld mixer or by hand until the dough is thick and well combined.
  • Carefully fold in white chocolate chips, freeze-dried raspberries and freeze-dried blueberries so the fruit disperses without breaking into dust.
  • Scoop mounds of dough onto a silicone- or parchment-lined baking sheet. Bake for 9–11 minutes, watching closely to avoid overbaking. Remove from the oven and let the cookies cool completely on the baking sheet so they set properly.
