Start by cutting heart shapes from a tortilla and baking them until they are crisp and golden. Spread a quick avocado cream on each chip, then top with a heart-shaped piece of fresh mozzarella, a tomato heart, and a basil leaf for a bright, bite-sized twist on classic Caprese flavors.

These bites are best assembled shortly before serving so the tortilla cups stay crisp. You can, however, prepare the components ahead of time and finish them with a drizzle of balsamic glaze and a sprinkle of sea salt right before plating.

Recipe Tip

If you need to save time, skip the avocado cream and use pesto, aioli, or cream cheese instead for a different but delicious base.

Ingredients 

Tortilla hearts

  • 1 tortilla
  • 1 tablespoon olive oil

Avocado cream

  • 1 avocado
  • 2 tablespoons sour cream, or crème fraîche
  • 1 clove garlic
  • 1 tablespoon parsley
  • 1 teaspoon onion powder
  • sea salt, to taste

Topping

  • 2 fresh mozzarella, balls
  • 1 tomato, large
  • fresh basil, leaves

Instructions 

  • Preheat the oven to 175°C / 350°F (fan).
  • Use the large heart-shaped cutter to cut hearts from the tortilla.
  • Place the tortilla hearts into a muffin tin so they form cups.
  • Brush each heart with olive oil and sprinkle lightly with sea salt.
  • Bake for 4–5 minutes, or until the edges are golden and crisp. Remove and let cool.
  • For the avocado cream, blend the avocado, sour cream (or crème fraîche), garlic, parsley, onion powder, and sea salt in a small food processor until smooth and creamy.
  • Cut the mozzarella into hearts using the medium cutter.
  • Shape the tomato into small hearts with the small cutter. It helps to pierce the soft side of the tomato first for cleaner cuts.
  • Assemble each tortilla cup: spread a little avocado cream, place a mozzarella heart, add a basil leaf, and top with a tomato heart.
  • Finish with a light sprinkle of sea salt and serve immediately.
