Last fall I received a box of new Wilton products, including Limited Edition Marshmallow Candy Melts. My boys love anything marshmallow-flavored, so I wanted to make something special. I had a box of funfetti cake mix on hand, which made the perfect base for confetti cookies. Instead of traditional frosting, I topped the cookies with melted marshmallow candy — and these marshmallow confetti cookies were born!

You can use any sprinkles you like, or leave the cookies plain if you prefer. I used jimmies from a Wilton set, but any colorful sprinkles will work for birthdays, holidays or everyday treats. I often choose small sets that give a variety of shapes and colors so each cookie looks festive.

Products Needed:
Fun sprinkles (jimmies, nonpareils, or mixed assortments) are optional but recommended for a confetti look. Use what fits your celebration—birthday colors, seasonal hues, or a simple rainbow mix.
Note on Candy Melts
Limited edition flavors like marshmallow don’t always stick around, but Wilton regularly releases new and seasonal flavors. Sugar cookie or traditional chocolate candy melts make great substitutes. For the look pictured here, bright white candy melts are ideal.

Emilie (Altered Recipe from Pillsbury)
Ingredients
- 1 18.9-oz. pkg. Pillsbury™ Moist Supreme™ Funfetti® Cake Mix
- 1/3 cup oil
- 2 eggs
- 12 oz Wilton Marshmallow Candy Melts (or other candy melts)
- Wilton sprinkles (or preferred sprinkles)
Instructions
- Preheat oven to 375°F. In a large bowl combine cake mix, oil and eggs until well blended. Roll dough into 1-inch balls.
- Place balls 2 inches apart on parchment-lined or silicone baking sheet. (Ungreased cookie sheets also work.)
- Dip a small glass in flour and use it to flatten each ball to about 1/4″ thick.
- Bake 6 to 8 minutes, or until edges are light golden brown.
- Cool on the baking sheet 1 minute, then transfer to a wire rack to cool completely.
- Melt candy melts in a microwave-safe bowl. Start with 1 minute, stir, then continue in 30-second bursts, stirring between intervals until smooth. Do not overheat.
- Spread melted candy over each cooled cookie, then immediately sprinkle with your chosen sprinkles so they stick.
- Allow the candy to set completely before stacking or storing.
- Store cookies in a tightly covered container.

Kitchen Tip:
Melted candy sets quickly, so work in small batches: spread candy on two or three cookies, add sprinkles, then move on to the next group. Within minutes the topping will harden and the cookies will be easy to stack and transport.

Spreading the melted candy over a few cookies at a time before adding sprinkles worked best for me. The finished cookies set firm enough in minutes, making them great for packing in boxes or taking to parties.

Melted candy is a fun alternative to traditional frosting and adds a different texture and flavor. Everyone who tried these cookies enjoyed the marshmallow topping and the bright, festive appearance.
