This crisp comes together in just a few steps: toss the berries with a little sugar, flour, and lemon juice; brown the butter; mix the browned butter with oats, flour, brown sugar, nuts, and cinnamon into a clumpy streusel; sprinkle it over the berries and bake. For a shortcut, melted butter works fine instead of browned butter, but toasty browned butter adds an extra layer of flavor that’s hard to beat. Serve warm with vanilla ice cream for a classic finish.

You can use any combination of berries you like—this version uses strawberries, blueberries, and blackberries for a familiar, balanced flavor. If you have frozen pie filling or leftover fruit from another recipe, feel free to use that too; adjust the sugar if your fruit is already sweetened. This crisp is an adaptable, reliable dessert that will likely become a staple in your recipe rotation.

Ingredients

  • For the streusel topping
  • 1/4 cup (1/2 stick) unsalted butter
  • 1/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/3 cup pecans
  • 1 teaspoon cinnamon
  • For the filling
  • 1 pint blueberries
  • 1 pint blackberries
  • 1 lb strawberries, diced
  • 1 cup granulated sugar
  • 1/4 cup flour
  • Juice of 1/2 lemon

Instructions

  • Preheat the oven to 375°F. Spray a 9-inch pie dish or 9×9 baking dish with nonstick spray and set aside.
  • In a large bowl, combine the blueberries, blackberries, diced strawberries, granulated sugar, 1/4 cup flour, and lemon juice. Toss gently to coat, then pour the mixture into the prepared dish.
  • In a small nonstick saucepan, melt the butter over medium-high heat. Reduce the heat to medium-low and whisk as the butter foams and begins to brown. When it turns a medium to dark golden color and gives off a nutty aroma, remove it from the heat immediately to prevent burning.
  • Whisk the brown sugar and cinnamon into the browned butter. Stir in the 1/2 cup flour, pecans, and oats until the mixture is clumpy and well combined.
  • Sprinkle the streusel evenly over the berries. Bake for 45–50 minutes, or until the top is golden brown and the filling is bubbly. Let cool briefly and serve warm with vanilla ice cream if desired.
