From my experience, a successful kids’ birthday party usually needs three things:
1. Presents.
2. Pizza.
3. Cake — especially the cake!
Why not save time and delight the kids by combining two of those into one treat?

Cake Batter Pizza
(Serves 1–2)
- 70 grams (about 1/2 cup) flour — I used two parts spelt to one part coconut flour. White flour or whole wheat pastry flour work well. (You can make a gluten-free version with suitable substitutions.)
- 1 teaspoon baking powder
- Sweetener to taste (for example, 2 tablespoons sugar or 2 stevia packets)
- 100 grams (just under 1/2 cup) liquid: water, juice, or milk of choice
- 32 g (2 tablespoons) coconut oil, or use applesauce for a fat-free option. Other alternatives: pumpkin purée, canola oil, mashed banana, or even baby food.
- 1/8 teaspoon salt
- Optional: 1/4 teaspoon butter extract for a buttery “cake” flavor (vegan-friendly)
- A few handfuls of sprinkles
Instructions: Combine the dry ingredients, then add the liquid, fat, and any extracts. Pour the batter into a well-greased pan and scatter sprinkles on top. Bake in an un-preheated oven at 400°F (about 200°C) for 14–15 minutes, or until set and lightly golden. Let the cake rest in the pan for 10 minutes before running a knife around the edges and transferring it to a plate.
Tips: Be sure to spray or oil your baking pan well to prevent sticking. If you have trouble with the cake sticking, try baking on a greased baking sheet and using a rolling pin to flatten the batter slightly before baking.
