Note about Salt in my Recipes

I use Diamond Kosher Crystal Salt in my recipes unless otherwise noted. Different salts vary in crystal size and salinity, so if you use another brand, adjust amounts accordingly. For example, Morton’s Kosher Salt has smaller, denser granules and is noticeably saltier, so you may need less.

Baking in grams

I publish recipes by weight because baking by weight is the most accurate method. Digital scales are affordable and precise; for very small amounts under 10 grams, a pocket precision scale is handy. Measuring cups can introduce significant variation, especially with gluten-free flours that weigh differently than wheat flour. I include spoon measurements for some small ingredients, but weighing yields the most consistent results.

Note about Ovens and Oven Temperatures

All recipes are developed and tested in a conventional oven, with the rack placed in the middle position to avoid burning on the bottom. If you bake with a convection (fan) oven, reduce temperature or adjust baking times, as convection can dry baked goods faster. Ovens can take 15–20 minutes to fully preheat; using an oven thermometer is a good way to ensure accurate temperatures.
