Ingredients

  • 3 lb Pork shoulder steaks

Marinade

  • 8 tablespoon Minced lemongrass
  • 2 tablespoon Fish sauce
  • 3 tablespoon White sugar
  • 1 teaspoon MSG (optional)
  • 4 tablespoon Neutral oil (avocado or other)
  • 8 cloves Minced garlic

Garnish and Veggies

  • 1 large Tomato
  • 1 large Cucumber
  • 1 large Scallion
  • 4 cup Broken jasmine rice (cooked)

Garlic Fish Sauce

  • 6 tablespoon Water
  • 2 tablespoon White sugar
  • 2 tablespoon Fresh lime juice
  • 1 tablespoon Minced garlic
  • 1 medium Thai chili, diced (optional)

Instructions

Marinade the Pork

  • Combine all marinade ingredients in a gallon freezer bag, add the pork steaks, seal, and refrigerate. Marinate for at least 3 hours, preferably overnight for best flavor.
  • When ready to cook, remove the steaks from the bag and discard the remaining marinade. Brush or rinse away any excess minced lemongrass that clings to the meat.

Garlic Fish Sauce

  • In a small bowl, whisk together water, sugar, lime juice, minced garlic, and diced chili (if using) until the sugar dissolves. Taste and adjust sweetness or acidity as desired.

Grilling

  • Preheat the grill to high. Grill the steaks until they reach your preferred doneness; an instant-read thermometer should read 165°F (74°C) for safe pork. Let the meat rest a few minutes before slicing.

Serving

  • Serve the sliced pork with cooked jasmine rice, sliced tomato and cucumber, chopped scallion, and the prepared garlic fish sauce on the side for drizzling.
