When September arrives on the ranch, the air cools and mornings turn crisp. I look forward to autumn the same way many of us welcome spring after a long winter. I love the cooler mornings, changing leaves and the late-summer harvest—pumpkins, melons, berries and squash all remind me why this season is so special.
Pumpkin dishes feel essential in autumn. Pumpkin pie spice—cloves, cinnamon, nutmeg, ginger and allspice—adds an instant fall character to many recipes. I enjoy using pumpkin puree in desserts because it can replace some of the fat in recipes, much like applesauce, creating moist baked goods with fewer calories. It’s an easy way to give familiar recipes a cozy, seasonal twist.

For this month’s roundup I made a batch of pumpkin spiced pancakes—warm, fluffy pancakes perfect for a slow Sunday morning. Instead of granulated sugar I used brown sugar, which lends a deeper, caramel-like flavor that complements the pumpkin spice. I also tried coarse salt in the batter; the contrast of salty and sweet was delightful and balanced the spices beautifully. I serve these pancakes with butter and cinnamon sugar, though a maple syrup with a touch of bourbon is another excellent option.

The Recipe
Pumpkin Spiced Pancakes
Ingredients
- 2 1/2 cups all purpose flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon coarse salt important!
- 1 tablespoon pumpkin pie spice mix
- 1/2 cup pumpkin puree
- 2 eggs
- 2 cups milk
- ¼ cup canola oil
- 2 tsp. vanilla
Instructions

In a medium bowl, whisk together the brown sugar, coarse salt, baking powder, flour, and pumpkin pie spice. Break up any sugar lumps so the mixture is even. The coarse salt enhances the overall flavor.

In a separate bowl, beat the eggs with vanilla, milk, oil and pumpkin puree until smooth. Pour the wet mixture into the dry ingredients.

Stir until just combined; avoid over-mixing to keep the pancakes tender.

To cook: Heat a non-stick skillet over medium heat and drop 1/2 cup portions of batter onto the surface.

When bubbles form on the surface and edges look set, flip and cook until golden and cooked through.

Serve warm with cinnamon sugar, butter or your favorite maple syrup.
