Ingredients

  • 4 medium slices of artisan bread (or bread of choice)
  • 4 slices of bacon
  • 4 fresh eggs, at room temperature
  • 2 tbsp chilli jam
  • 1 tbsp butter
  • 1 tbsp finely diced fresh chives
  • Salt & pepper, to taste

Instructions

  1. Add the bacon to a large pan over low-medium heat. Fry low and slow until the fat renders and the bacon is nicely crispy. Remove the bacon and leave the rendered fat in the pan. Raise heat to medium.
  2. Carefully crack two eggs into the pan close to the surface, spacing them apart. Add the butter and use a spoon to baste the egg whites with the hot bacon fat and butter. Season with salt and pepper. Avoid basting the yolk if you want it runny.
  3. When the whites are fully opaque, remove the eggs and repeat with the remaining two eggs.
  4. Lay the bread slices in the pan and toast both sides in the leftover oil until golden.
